A vegetarian and egg-free version of the Greek layered pasta bake called Pastitsio. Pastitsio is made by layering a Vegetable Ragu on a pasta layer, and this is topped with a Mornay sauce and finished off with a sprinkling of grated cheese. This is then baked until the cheese layer melts and turns a light golden brown.
